It’s a little over an hour from my home to Columbus Relief. It would have been very long days of painting and travel if not for the Randolph Hotel and Diner. Yep, it’s great to have a place to stay and very good food much closer to the mural site. One of the delightful surprises was sesame seed chicken. It was a taste to savor and remember.

Sesame Seed Chicken
Columbus, Ohio
Ingredients:
| 1½ pound chicken breasts ½ cup honey ¼ cup soy sauce 2 Tbs dried onion 2 Tbs ketchup 1 Tbs oil of your choice ½ tsp garlic powder 2 tsp cornstarch dissolved in 3 Tbs water 1 mess of sesame seeds |
Combine the honey, soy sauce, onion, ketchup, oil, and garlic. Pour the mixture over the chicken breasts. In your trusty crock pot, cook on low for 3 – 4 hours. In a hurry? You can cook it on high for 1½ - 2½ hours. The goal is to cook it long enough for the chicken to be completely cooked.
Remove the chicken breasts from the crock pot, leaving the sauce behind.
Dissolve 2 tsp of cornstarch in 3 Tbs of water. Pout this into the crock pot, stirring to combine everything. Replace the lid and cook the sauce on high for 10 more minutes until it is slightly thickened.
Cut the chicken into bite sized pieces and return them to the crock pot. Simmer on low until rice is ready. Serve the chicken over the rice.
Scoop the cake warm into serving dishes and top with ice cream or whipped cream if desired. (It should be desired. And, as you see in the photo, you may be inclined to add some steamed carrots and broccoli on the side.
