Salsa Roja
I'm fairly certain that every family across Mexico has their own unique take on salsa. There are so many ways to prepare it and they are all marvelous. Just in case your Spanish is about as bad as mine, "roja" means red. And, when you look over the list of ingredients, you'll see that this is a mild salsa with no added fire at all. If you want to turn up the flame a little, feel free to experiment with a jalapeƱo or two.

Ingredients
4 tomatoes 1 garlic clove | dash of vinegar... pinch of oregano |
This salsa is as simple as it is delicious. Fry up your tomatoes until they are soft. At this point, toss the in the blender with the garlic, vinegar, and oregano. Blend it, and you are ready to go.
I'm not sure how Mexican cooking was done pre-blenders. But, I am certainly thankful for what that little tool in the kitchen can do.
